Recipe: Albanian Greek salad

Ingredients
1 head crisp lettuce
1 cucumber
1 red pepper
2 large ripe tomatoes
Feta cheese
Hard boiled eggs
For the dressing: Olive oil, lemon juice, salt

Makes enough salad for at least 8 people. You can easily use less for fewer people.

 

1 Wash a head of lettuce thoroughly and chop it.

DANGER: Do not chop the salad in this way (below) - always use a chopping board and keep the knife away from your fingers (above)!

 

 

Boil eggs for 10 minutes.

 

 

 

Chop the red pepper.

 

 

 

Slice or chop the cucumber.

 

 

Peel the eggs.

 

 

 

Cut the feta cheese into chunks. 

 

7 Mix all the ingredients in a bowl.

8 Dress the salad with some olive oil, lemon juice and a tiny bit of salt (there's no need for more because feta cheese is already quite salty).

 

9 Serve the salad with the eggs and fresh bread (shown here is Turkish flat bread with sesame seeds).
