Recipe: Spinach baked with feta cheese and egg

Ingredients
Large handful fresh parsley
1kg fresh spinach
Pack spring onions
3 eggs
Half pack feta cheese
Half pot single cream
Some olive oil for frying
Black pepper

 

Bunch of fresh parsley and fresh spinach


 

1 Remove the stalks from the spinach and wash them.
Keep them aside for another dish.

 

2 Chop the spring onions

 

3 Chop the spinach leaves

4 Chop the parsley

5 Fry the spring onions in a little olive oil

 

6 Break the eggs into a bowl and beat them

 

 

 

 

 

 

 

 

7 Fry the spinach leaves in a little oil

 

8 Cut the feta cheese into chunks

 

9 Crumble the feta into the spinach

 

10 Remove the pan from the heat and pour the eggs over the spinach

11 Divide the mixture between two oven-proof dishes

 

12 Pour the cream over the mixture in the two dishes

 

13 Bake in a medium hot oven (190 degrees) for 15-20 minutes until the egg is cooked
