Recipe: Albanian vegetable omelette

Ingredients
2 eggs
1 small courgette
1 long pepper
1 1/2 spring onions
50g feta cheese
1 tomato
Olive oil
A little salt for seasoning

1 Chop the pepper and fry in a little olive oil for 3 minutes. Peel and slice the courgette and fry in a little oil too.

3 Put the fried peppers and courgettes aside, and chop the spring onions and tomato.

3 Beat the egg.

 

4 Pour the egg into a frying pan and add the vegetables and chopped feta cheese on top.

5 Fry in a some oil until thouroughly cooked.


6 Serve with fresh bread.
